From Food Truck to Restaurant

Our Story

Chivis Tacos began with a dream to bring authentic Mexican street food to Denver. In 2013, we launched a single food truck with the support of our family, inspired by our parents' Michoacán roots. Our mom, Silvia, raised funds by selling homemade burritos, while our siblings joined as cooks, making it a true family venture.

We quickly became a late-night favorite, serving hungry crowds outside Denver nightclubs. A decade later, in October 2024, we opened our first restaurant at 2101 East Colfax Avenue, where we now offer an expanded menu, including all-day breakfast, birria ramen, and tamales.

Though we’ve grown, our mission remains the same: to share the flavors of Mexico with our community through fresh, scratch-made dishes at affordable prices. From our family to yours, thank you for being part of the Chivis Tacos journey.
